Have you moved the iSync application out of its proper location loose in the main Applications folder? To change from Bluetooth to USB syncing you have to completely delete your device from both iSync and the Bluetooth system preferences pane, then go back into iSync and choose 'Add Device' from the Devices menu with your phone connected via USB.
